Our friends from Black & Blue in Nijmegen created a very tasty hot wing recipe using our Brain Buzzer hot sauce with Carolina Reaper. Below you will find their story and recipe.
Chicken wings are one of our favorite BBQ snacks. They are easy, relatively fast and you can vary endlessly. This variant is sweet and super spicy because of our honey glaze with Raijmakers Hot Sauce. For this recipe they chose the spiciest of the four: the Brain Buzzer. This hot sauce contains Carolina Reaper, the hottest pepper on earth. If it gets a little too hot for you now, you can also choose one of the three ‘milder’ variants. They’re still pretty spicy too.
We opted for the whole wing for these Chicken Wings, but individual wings also work well. Get your BBQ up to 180 degrees indirectly. Make sure to rub you chicken with a quality chicken rub. We opted for the Chicken Wings rub from Sucklebusters in this dish. Place the wings on the BBQ. In a bowl, mix 4 tablespoons of honey with 2 to 4 tablespoons of hot sauce (depending on your spice tolerance). Cook them in about 20 to 30 minutes until they are at least 72 degrees core temperature. With chicken wings you can easily measure this with a Thermapen. After about 15 minutes, coat your chicken wings with the glaze once. When your chicken wings are ready, you can glaze them one more time. Put them nicely on a board and enjoy. Make sure you have something to drink available!

- Rub for chicken
- Raijmakers Heetmakers Brain Buzzer hot sauce (to taste)
- Honey

3. Put your Chicken Wings on the BBQ
4. Mix the honey and the Hot Sauce in a bowl
5. Just before the Wings are ready, glaze them with the honey and hot sauce glaze
6. Done!
